An online recipe book of the cheap ass meals my family eats on a regular basis. All measurements, temperatures, and cooking times are approximate. Feel free to try any of the recipes and post your own variations. You are more than welcome to link to any of the recipies as well.

    Strawberry Yogurt Pie 

    Ingredients:

    2 prepared crumb pie crusts
    1 small tub of whipped cream
    3 small strawberry yogurts
    2 cups of strawberries (fresh or frozen)

    Place whipped cream in a large bowl. Fold in containers of yogurt being careful not to over mix. Place half of the mixture in each pie shell. Cover and allow to set in refrigerator for 4-6 hours. Before serving slice strawberries and place them over the top of the pie.

    Variations:
    -You may substitute any flavor of yogurt and fruit topping.
    -Strawberry pie in a chocolate cookie crust is delicious!
    -Try adding marshmallows.

    Accidental Enchiladas 

    Ingredients:

    1 lb ground beef
    12 oz can of chili beans in sauce
    1 small can hominy (drained)
    12 oz can tomatoes with chilis
    1/2 lb grated cheese
    1/2 package (approx 2 tablespoons) of taco seasoning
    1 cup water
    7-10 tortillas

    Brown meat in pot. Drain grease and add beans (include sauce) hominy, tomatoes taco seasoning and water. Heat on stove until boiling. Boil approximately 10 minutes.

    strain out the sauce reserving it in a shallow bowl. Pour about 1/4 cup of sauce into the bottom of a cake pan tilt pan to cover entire bottom.

    Dredge tortillas through sauce one at a time. Fill each tortilla with approximately 1/3 cup of filling and some cheese. Roll tortillas and lie them side by side in the cake pan. Pour remaining sauce over enchiladas. Sprinkle with cheese. Bake at 425 for approximately 25 minutes or until bubbly.

    Variation:
    Mix ingredients and place in casserole dish sprinkle with cheese after baking use tortilla chips to scoop it up.

    Crockpot Chicken 'n' Rice 

    Ingredients

    3 Cups short grain white rice
    1 can Cream of Mushroom Soup
    1 can Cream of Chicken Soup
    1 can Cream of Celery Soup
    1 can of water
    7-8 frozen chicken tenderloin pieces (or 4-5 breasts)
    Seasoning Salt

    Stir all ingredients, except chicken and seasoning salt, together in crock pot. Place chicken on top and sprinkle with seasoning salt to taste. Cook on high heat for 4-5 hours or on low heat for longer. Serves 4-6

    Variations:
    -Omit chicken and make 'N' Rice.

    Garlic Ranch Cheese Bread 

    Ingredients:

    1 loaf french bread
    1/4 cup ranch dressing
    2 teaspoons minced garlic
    shredded cheese

    Slice bread in half lengthwise. In a small bowl mix ranch dressing with minced garlic, Spread evenly over the face of both pieces of bread. Sprinkle with shreaded cheese and place under broiler. Watch carefully and pull out of oven when cheese is melted and edges start to brown. Remove from oven, cut in slices and serve.

    Variations:Add cheese, diced tomato, and sliced olives (or other favorite toppings) to make an easy pizza.

    Creamy Cheesy Crockpot Chicken 

    Ingredients:

    Approx 7 pieces chicken (breasts, thighs, or whatever)
    1 can condensed cheese soup
    2 cans Cream of Chicken Soup
    1 can water
    Seasoning to taste

    Place chicken in crockpot. Stir other ingredients together in a small bowl. Pour over chicken. Cook in crockpot on high for 6-8 hours. Season to taste. Serve over rice or noodles.

    Variations:
    Try using different Soups instead of Cream of Chicken like Mushroom or Celery.
    -AND/OR-
    Add one Tablespoon of dehydrated onion to chicken before pouring sauce over (because EVERYTHING is better with dehydrated onins!)

    Tuna Casserole 

    Ingredients:

    1 can of Tuna in water (drained)
    1 can Cream of Mushroom Soup
    1/2 lb macaroni noodles
    2 teaspoons dehydrated onions
    2 tablespoons sourcream
    Grated Cheese or other topping

    Prepare noodles according to package directions. Mix tuna, soup, onions, and sourcream well in casserole dish and add drained noodles. Mix well. Top with Cheese. Bake at 375* until bubbly and starting to brown. Let cool and set slightly before serving.

    Variations:
    Stir a can of drained green beans into the dish before baking.
    Top with crushed potato chips, crackers, buttered bread crumbs, tater tots, or mashed potatoes before adding cheese.

    Pizza On Someone Else 

    Ingredients:

    1 or more Friends or family with money
    Pizza (to taste)

    Go to a party or other group gathering and gorge yourself on the available pizza.

    Variations:
    Other foods can be substituted for pizza. Experiment with appetizer, prime rib, or a variety of deserts.

    Sloppy Joes 

    5 Frozen Hamburger patties
    1 pkg sloppy joe mix
    6 oz can tomato paste
    1 cup water
    Hamburger buns
    sliced cheddar cheese

    Brown and drain hamburger. Prepare sloppy joe mix according to directions on package. Serve on buns with cheese and ketchup.

    Serve with tater tots and green beans (or your favorite side dish).

    Pork Steak 

    2-4 pork shoulder blade steaks
    seasoning salt
    garlic salt

    Place steaks on broiler pan and season to taste (we season heavily!). Cook under broiler until the seasoning begins to turn black then turn and season the other side. Allow to cook on second side until it also appears done.

    Serve with steamed rice and broccoli or corn (or whatever veggie and/or pasta you chose).

    Soft Tacos 

    5 frozen hamburger patties** (or 1 1/4 lbs of ground beef)
    1/2 pkg taco seasoning (or a whole pkg if your kids will eat it, mine won't)
    3/4 cup water
    1 can refried beans
    12 soft taco tortillas
    2 roma tomatoes
    8 oz cheddar cheese
    1/2 head of lettuce
    sour cream

    Brown, crumble, and drain hamburger patties. Add taco seasoning and water. Simmer until water has evaporated.

    Warm refried beans in a sauce pan over low heat or in the microwave on high for 1-2 minutes.

    Meanwhile, Shred lettuce. Seed and dice tomatoes. And grate cheese.

    Serve buffet style with sour cream and various sauces.

    Variations:

    Taco Salad. Prepare as above but substitute tortilla chips for tortilla shells and pinto beans for refried beans.

    -AND/OR-

    Add other toppings to taste. Guacamole, olives, jalapenos, onions, etc.

    **I buy my hamburger in already formed frozen patties because I HATE making patties by hand. I have found that buying hamburger in patties allows me to keep it for a long time (because it's frozen) and not have to worry about making sure I took hamburger out the day before to defrost because you can cook them straight from the freezer.

    Spaghetti 

    Ingredients:
    1 can Hunts or Heinz Spaghetti sauce (whichever is on sale)
    1 handfull of spaghetti noodles
    1 lb breakfast sausage
    garlic salt to taste

    Fill large pot with a lot of water. Bring to boil.

    While waiting for the pot to boil brown and drain sausage. Add can of spaghetti sauce and garlic salt. Simmer and stir frequently.

    Boil spaghetti noodle according to package directions. Drain. Return noodles to large pot and pour sauce over the top.

    Serve with salad and bread.

    9 Can Chili Soup 

    Ingredients:

    2 cans pinto beans
    1 can black beans
    1 can small red bean
    1 can corn
    1 can diced tomatoes
    1 can tomato sauce
    2 cans water
    1/2 package of taco seasoning

    optional:
    tortilla chips
    sour cream
    cheese

    Drain and rinse all beans and corn in a colander (you can do them all at once). Put them in a crockpot and add all other ingredients. Stir and cook in crockpot for at least 4 hours (or you can cook it on the stove on a low heat). Serve with crumbled tortilla chips, shredded cheese, and a dollop of sour cream. Makes great leftovers.

    Variations:
    Add meat beef or turkey. Cook fully before adding with other ingredients.

    -OR-

    Garnish with olives (mmmmm!!)

    -OR-

    Add hotsauce, if you're into that.

    Cheesy Chicken Enchiladas 

    Ingredients:

    7 frozen chicken tenderloins (about 3 cups cooked and diced)
    1lb shredded Cheddar cheese
    12 soft taco sized flour tortillas
    1 can cream of Chicken Soup
    1 4oz can of diced green chilies
    16oz (1lb) sour cream
    dehydrated onions

    preheat oven to 375*
    Place frozen chicken in microwave safe bowl. Add enough water to cover. Sprinkle dehydrated onions on top (maybe a tablespoon?). Microwave on high for about 12-15 minutes. Meanwhile place the cream of chicken soup, sour cream, and chilies in a small sauce pan and cook over a medium low heat until it begins to bubble, stirring frequently. When chicken is cooked drain water and let cool slightly. Then dice (or chop, or shred, or whatever, just make it smaller!) the chicken and put it back in the bowl. Add enough of the cram sauce to coat the chicken.

    Put a tablespoon (or so) of the sauce in the bottom of each pan this keeps the food from sticking. To make the enchiladas put about 2 tablespoons of meat and a small handful of cheese inside of each tortilla and roll them up tucking in the sides. This should make about 2 pans or 12 enchiladas. Pour the remaining sauce over the enchiladas and sprinkle with remaining cheese. Bake at 375* for about 35 minutes or until bubbly and just starting to brown.

    Variations
    Make an enchilada pie. Instead of rolling the filling up in tortillas layer them between tortillas 'lasagne' style in a pie plan. VERY tasty reheated on day 2.

    -OR-

    Add prepared enchilada sauce to the mix (haven't done this myself but I have on good authority that this is good).

    -OR-

    Use breakfast sausage instead of Chicken for a perfect breakfast (or dinner) entree.
